Myron K. “BILL” Been: Owner of Myron’s Prime Steak Houses in San Antonio and New Braunfels, Texas. Myron’s first location is an upscale fine dining restaurant located in historic downtown New Braunfels, Texas. The New Braunfel’s Myron’s sister location is in the Alon Towne center in San Antonio, at Wurzbach Parkway and Military Hwy.
Both Myron’s locations proudly server mid-western prime beef, the top 2% of all the prime in the U.S.
While waiting to open Myron’s, Bill was General Manager of Rio Rio Cantina,. Rio Rio Cantina is a 15,000 square foot California, Tex-Mex restaurant on the San Antonio Riverwalk in Downtown San Antonio, Texas.
Prior to Rio Rio, Bill was General Manager and Co-Owner of Swig Martini Bar. Swig was an upscale full-service cigar and cocktail bar located in the highly successful South bank project on the banks of the San Antonio River.
Bill also has done two tours of duty with the highly successful Ruth’s Chris Steak House chain. While with Ruth’s Chris, Bill oversaw construction of the site, employee hiring and training, and created an award winning wine list, boasting the highest wine sales in the City of San Antonio during his tenure.
Bill was General Manager of Champions Sports Bar and Restaurant, where he helped develop the concept and menu and spearheaded the openings of Miami, Florida and Falls Church, Virginia.
Bill began his restaurant career at the Old San Francisco Steak House in Dallas, Texas. He spent 13 years total with the company becoming proficient in both front and back of the house management skills. Fate and a bit of luck brought him to San Antonio, where he was the General Manager of the Old San Francisco Steak House for 7 years. Each of these units produced revenues in excess of $5,000,000 annually. Bill brings to the table a total of 43 years food service experience. Along with excellent people skills, Bill has a comprehensive knowledge of food preparation, inventory cost and control, menu pricing and development and an extensive knowledge of fine wines.
Bill attended Texas Tech University
On a personal note, Bill has quite a passion for American Sadldlebred and Road Horses. Bill is a Reserve World Champion with his half-Dutch Harness, half-Road Horse “Helen Wheels”, second to William (Captain Kirk) Shatner and “Track Star”. Bill will be “racing” to capture the World Championship title this August in Freedom Hall, Louisville, Ky. In addition to Helen Wheels, Bill will be debuting with the majestic Fine Harness horse “No Words Needed”.
